This is my favorite recipe as it is published in the cookbook. I don't usually have the ham it specifies, but it works fine with ham hocks from the grocery, or the bone from a Heavenly Ham. I've even made a vegetarian version for my daughter, which she likes just fine, but my taste prefers the version with meat. Enjoy!

Red Beans & Rice
The New Orleans Cookbook
(for 8 or more)

This is the way red beans and rice were cooked in the old days – loaded with meat and steeped in a rich, natural gravy. You must include a large ham bone, whose marrow gives the beans that creamy texture and distinctive smoky flavor. Many supermarkets now carry only preboned hams, and you may have difficulty finding ham bones. Ask your local packer which butchers still bone their own hams and buy the bones in large batches. Ham bones freeze well, and a good supply in the freezer will enable you to prepare red beans the right way whenever you wish. If you have any left over, red beans freeze beautifully. Just add a little water and perhaps a pinch of salt when you reheat them.
Be sure to use baked rather than country or smoked ham in this and all other New Orleans bean dishes. Smoked ham is too salty and will unbalance the seasonings. Pickled pork {http://www.peacefulpastures.com/porkrecipes.asp} is pork shoulder marinated in brine for over a week; New Orleans markets regularly carry it, but elsewhere you probably will not find it. A good substitute for pickled pork is salt pork; with salt pork eliminate all other salt in the recipe.

2 pounds dried red kidney beans, soaked overnight in cold water to cover
1 large ham bone with some meat on it, sawed into 4” to 5” lengths
1 lb. seasoning (baked) ham, cut into 1” cubes 1 tbsp salt
1 lb. pickled pork, cut into large chunks 1/8 tsp cayenne
½ cup thinly sliced green shallot (scallion) tops	½ tsp dried thyme
2 cups chopped onion 1/8 tsp dried basil
½ cup chopped green pepper	½ tsp freshly ground black pepper
4 tsp finely minced garlic 1/8 tsp crushed red pepper pods
2 tbsp finely minced fresh parsley	2 whole bay leaves, quartered
approximately 2 qts/ cold water Boiled rice

Drain the soaked beans in a colander and put them, along with all the other ingredients (except rice), into a heavy 8- t 10-quart pot or kettle, adding just enough of the cold water to cover. Bring to a boil over high heat, then lower heat and simmer on low heat for 2 ½ to 2 hours, or until the beans are tender and a thick natural gravy has formed. Add about 1 cup of water toward the end of cooking if the mixture appears too dry. During cooking, stir frequently and scrape down the sides and across the bottom of the pot with a wooden spoon or spatula to prevent scorching. (If you use a heavy pot and very low heat – just high enough to keep the barest simmer going – you should have no problem with beans sticking to the pot during cooking.) Stir the entire mixture thoroughly just once about every half hour.
When the beans are cooked, turn off the heat. To serve, ladle about 1 ½ cups of beans, with meat and gravy, over a portion (about 2/3 cup) of boiled rice.

This is an easy yummy vegetarian meal that my family loves. It can also be made with chicken if you like.

1 cup uncooked millet
4 tablespoons butter
2 cups water
1 teaspoon salt

2 cups cheddar cheese shreded
8 tablespoons butter
8 tablespoons milk

1 head fresh cauliflower or 1 bunch fresh broccoli (can use frozen or mix these vegges)
(optional) you can add chick to this and it is very yummy 1-2 cup cooked chicken cubed!

Melt 4 tablespoons butter in a sauce pan and add uncooked millet. Saute until millet starts to brown. Add water and salt and bring to a boil. Reduce heat to low cover and let simmer for 25 minutes.

While millet is cooking melt 8 tablespoons butter in sauce pan and add cheese, milk and sage. Blend well until all cheese is melted into a smooth sauce and set aside.

Cook cauliflower/broccoli until just starting to get tender.

Mix cooked millet, cheese sauce, cauliflower/broccoli, and option chicken if you wish together. Place mixture into a 9X13 greased baking dish. Bake for 15-20 minutes at 350.

This is also a wonderful dish to make ahead and freeze or take to someone after having a baby :)

Many people have asked me for my homemade bread recipe so I thought I would post it for everyone. There will be small differences in the taste of this bread depending on what grain you use so here is a short guide.

Hard red wheat: full body, nutty flavor, very hardy, better than any store bought wheat bread.
Hard white wheat: full body wheat flavor, not very nutty, similar to a full wheat bread at the store.
Spelt: Very mild flavor, similar to store bought plain wheat bread.

1 1/2 cups hot water
1/2cup cold milk
1/2 cup oil (I use coconut or olive oil)
1/4 cup agave,honey or sugar
3 1/2 teaspoon yeast
Mix well
Add
3 cup freshly ground flour
2 teaspoons salt
2 tablespoons wheat gluten
1 tablespoon brown rice extract
Mix well
Add
Up to 2 1/2 more cups of flour
kneed or mix 5 minutes or more.
let rise 30-45 minutes or until doubled
Punch down
Split and shape into two loaf pans.
Let rise 30-45 minutes until doubled
Bake at 350 for 30-35 minutes.

Enjoy warm with butter or as sandwich bread when cool.

Now I don't know how "natural" you can be when it comes to heating and cooling your whole house, but I do have a recommendation for anyone in the market to a fair, honest, hardworking A/C guy.

His name is Alonzo Williams and he is the owner (and only worker) of Williams South Inc. Heating and Cooling. I had a BIG name company come last year to do a regular cleaning and check-up on my a/c unit because it was getting sluggish and they charged me $89 to tell me that I needed a $4700 new system and that mine was "un-cleanable".

This year I found Alonzo (also husband to a now very good friend of mine)! He charged me less and cleaned my system and now my a/c is running smooth as when we first bought our house! He is very honest and will not try to up-sell you to something you really don't need. He is also just out there trying to support his homeschooling family of 8 so if you are in need of some cool air or if this winter it gets to nippy for your liking give him a call!

Williams South Inc Heating and Cooling
904-424-1076

PS. I also filed a Better Business Report on the BIG A/C company and got my $89 back for lying to me!

Hello Everyone,
I just wanted to let you know of a wonderful Natural Carpet Cleaning Business in town called Cleaner Carpets and More. Not only are the owners good friends of mine and are also members of JNF they also do a fantastic job cleaning even the worst carpets (mine!).

As you all know I have 4 children, one of which is a very messy toddler! We bought our house over two years ago and had never had our carpets cleaned....they where a mess to say the least. I had them come out and do my carpets and my tile for a great price and they use an all natural citrus based cleaner which will not harm children or pets and it leaves your house smelling wonderful!

So if you are in need of some clean carpets, especially around the holidays check them out! I highly recommend them, they are a homeschooling family to boot!

This is a wonderful and very quick peach cobbler. I use the frozen peaches we get here at JNF for this one. If using the frozen peaches just run lukewarm water over slices for a few minutes before using them.

1cup sugar
3 tablespoons sugar
1 cup flour (fresh ground whole wheat works great!)
2 teaspoons baking powder
1/4 teaspoon salt
1 stick of butter
1 cup milk
1-2 teaspoon vanilla extract
1-2 teaspoons cinnamon
3-4 fresh peaches (3-4 cups frozen peaches)

Preheat oven to 375. While preheating place one stick of butter in a 9x13 pan and place in oven to let butter melt.

Mix sugar, flour, baking powder, salt and 1 teaspoon cinnamon (optional) until mixed well. Add milk and vanilla to taste.

In different bowel toss 3 tablespoons sugar and 1 teaspoon cinnamon over peach slices.

Take pan out of oven and pour batter in the melted butter. Drop seasoned peach slices evenly into batter, pour any remaining sweetened peach juice over dish. Place in oven for 25-30 minutes until golden brown. Wonderful with homemade vanilla ice cream or just a tall glass of cold milk!

Enjoy!

2 cups freshly ground flour (or whole wheat all purpose flour of choice)
2 cups organic sugar or muscavodo sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups finely shredded carrots (this is about 1 pound whole carrots...I prefer using baby carrots, they are sweeter)
1 cup coconut oil
4 farm fresh eggs

Mix flour, sugar, baking powder, baking soda, and cinnamon. Add carrots, coconut oil and eggs. Mix well, batter is very thick.

Divide into 2 greased 10 in cake pans and bake on 350 for 30-35 minutes. Turn out and let cool on wire rack before frosting.

Cream Cheese Frosting

1 block cream cheese
2 table spoons milk
1 teaspoon vanilla
3-4 cups powdered sugar

Mix cream cheese, milk, vanilla and 2 cups powdered sugar until blended. Keep adding powdered sugar until you get the quantity and consistence that you like.

4 TBS Coconut Oil
6 TBS Butter
1/2 TS Salt
1/2 CUP Popcorn
3/4 CUP Honey
1 TS Vanilla

In a large pot with good fitting lid add 4 tablespoons coconut oil and 2 tablespoons butter. Also add 1/2 teaspoon salt (or to taste) to the oil as it melts. Add one kernel pop corn and turn on med/high heat and wait for that kernel to pop. Once the kernel is popped you know the oil is hot enough.

Add 1/2 cup popcorn kernels to oil and shake pan occasionally to prevent burning. When the popping slows to 3 to 5 seconds between pops, remove pan from burner.

In a small pan place 1/2 stick butter and 3/4 cup honey along with 1 teaspoon vanilla on med heat. Stir well until mixture is very runny. Pour over hot popcorn and toss lightly with forks.

This is a super sticky, sweet treat that is so yummy you will be coming back for more! Salty and sweet at the same time.
