With a crinkled shape to the leaves, escarole is an example of greens that provide various degrees of flavor as the outer leaves are removed. While the outer leaves are a dark green, peeling back a layer will reveal a lighter shade of green. As the shade of the leaves lightens, the degree of bitter taste also lessens.

Red cipollini onions, or cipoline, are small, flattened, disc-shaped onions that have a copper-colored, thin papery skin. Their flesh is a blend of pale, translucent purple. The red cipoline is succulent, firm, semi-sweet and can be pungent in aroma and bite.
Applications
Caramelizing and slow roasting Cipollini onions brings out their natural sweetness. They have a depth of flavor that can hold up to herbs and assertive cheeses. Cipollini are also a great pickling onion that pairs well with cured meats and charcuterie. Roast whole cipollini with tomatoes, olive and thyme until browned and tender. Peel cipollini and braise in a wine, broth mixture until softened and the liquid has thickened and reduced. Roast whole cipollini and add to sauted wild mushrooms, then fold into egg custard and bake in a tart shell. Cippolini onions will keep, cool and dry, for up to a month.

Pablano Peppers are usually used in sauces, salsas, stuffing mixes, and chile relleno. The membranes and seeds of Pablano peppers are where most of the heat is found. So, if you don’t want it to be quite so spicy, be sure to take the veins and seeds out before using the pepper.
Pablanos can be stored and even frozen in airtight containers for many months until you are ready to use them. You can also choose to dry the peppers out for later use.

Selection & Storage
Ruby Crescent Fingerling Potatoes should be kept in refrigeration at temperatures from 45-55 degrees F. When stored in cooler temperatures, the sugar content of these potatoes has a tendency to change to starch.
